Menu Monday

Happy Halloween!

We had a busy weekend of costume parties and haunted houses. Looking forward to taking the kids trick or treating tonight!

This weeks menu….so delicious. I had a leftover night this week or as I like to think of it buffet night. Not everyone was here every night for dinner and so I did not want food to go to waste.

Monday: Chicken Pasta

Tuesday: Salad with homemade croutons, chicken and veggies.

Wednesday: Leftovers

Thursday: Teriyaki Chicken, fried rice and steamed broccoli (homemade teriyaki sauce-so good, so easy!)

Friday: Homemade Chilli

Saturday: Costume party (had some snacks before the party so I would not be tempted to eat at the party)

Sunday: Grilled burgers and homemade onion rings.

Todays recipe is Chicken Pasta. +

This is a throw together quickly type of dinner. There is no measuring and ingredients can be substituted to your liking. This is a real family favorite around here and I love it best the next day!

1 pound penne pasta

4 chicken breasts, chopped

Olive Oil

sun-dried Tomatoes, chopped or Julienne cut (as many as you like, I use at least 1 cup)

Herbes de Provence

In a large skillet heat olive oil, add chopped chicken and tomatoes. Sprinkle desired amount of herbes de Provence and stir well, Let cut. Meanwhile boil water for pasta, cook and drain. Toss chicken and tomatoes with pasta and top with fresh grated parmesan cheese. Enjoy!
