Menu Monday and a snack!

Happy Monday!

13 Days until Christmas. I am so excited. Today i am sharing a great snack to  make. It is super easy and so good. My hubbie mentioned it would be great on vanilla ice cream and I thought next time I won’t form ball shapes but spread it evenly on a cookie sheet and bake. That way it is easy to top on the ice cream or over yogurt. These smell so delicious, they are soft and tasty!

Oatmeal & Fruit Drops

1 ½ c rolled oats

1 c coconut flakes

½ t sea salt

1 t cinnamon

½ t all spice

Mix well then add;

1 c dried raisins, cranberries, blue berries or other dried fruit

Combine the following in a separate bowl and then add to the dry ingredients and mix well.

3 ripe bananas mashed

¼  c canola oil

1 t vanilla

Place by spoonfuls, use a cookie cutter or spread in a pan lined with parchment paper. Bake at 350 degrees for 20 minutes or until edges are browned.

So for last weekes menu I prepared….

Chicken n Dumplins and homemade biscuits

Macc & cheese (an all cheddar version)

My favorite tomato cream sauce pasta

We did leftovers twice due to a Christmas Program and then to clean out the fridge to make room for party food. Ou annual Christmas Dinner Party was this past weekend….so fun,

The menu was…

Appetizers:

Goat cheese stuffed piquillo peppers with capers

teriyaki shrimp cocktail

Caprese salad on a stick

Dinner:

Cesar salad

Peppercorn marinated steak

Spicy honey chicken

Roasted green beans and mushrooms

Parmesan roasted fries

Dessert:

Cheese Tassies

Tiramisu

Cheesecake stuffed strawberries

Peppermint bark

    Thanks for the snack recipe. I’m looking for ward to trying it, but first I have two questions: what could I sub for the banana (migraines)? Can you recommend a brand of certified gluten free oats?

      Diana,
      Let me look through my “notes” and see about the oats replacements. Also the bananas I think add more stickyness to hold the drops together so any other food that could do that would work. A peanut butter or nutella could work great, pumpkin would be yummy to. I wouldn’t do more than a 1/2 cup…Good luck!
