Happy Monday!

Now that the holidays are over and all the festive food is gone I am back to my regular menu postings.

This week I am going to share with you our favorite pizza recipe. It is simple and doe snot take much time at all and sooo good! But first here is what i ate this week.

Sunday: Chicken with a greek green bean salad.

Monday: Chicken and dumplings with homemade biscuits

Tuesday: General Tao’s Chicken and fried rice and broccoli

Wednesday: Pizza

Thursday: Eggs, bacon and blueberry cake

Friday: Per the kids request cheeseburger and homemade fries with veggies.

Saturday: date night, ate out at one the the few places I can dine at safely.

 

I have the cookbook Pizza: 50 Traditional and alternative recipes for the oven and Grill by Dwayne Ridgaway. I use this book when we want pizza.

My favorite dough recipe out of this book is the Whole Wheat and Honey Pizza Dough and the tomato sauce is amazing.

Dough:

1 package of yeast (1/4 ounces)

1 1/4 c warm water

                                        1/2 c flax-seed (optional)

                                        1 1/2 c unbleached flour

                                        1 1/2 c whole wheat flour

                                       1 table-spoon olive oil

                                       1 Tablespoon honey

                                       1/2 teaspoon sea salt

(I do not use honey or flax-seed)

Combine water and yeast and honey in a large mixing bowl, stir to combine and dissolve yeast. Set aside until it is foamy on top.

Combine the flours, flax-seed, yeast mixture, oil and salt in a food processor. Pulse to combine all ingredients. Continue to process until the dough forms a ball. Turn dough out on a lightly floured surface, knead until smooth and firm. Coat a large bowl with oil, place dough in bowl and turn to coat all sides. Cover and place in a warm area, let rise to double, about 45 minutes to 1 hour. Punch down the dough, transfer to a lightly floured work surface knead briefly. Divide dough in half, shape each half into a ball. Roll out dough to a 12-16 inch circle.

At this point I place my dough in a 450 degree oven until the crust is lightly browned. Then I pull out to top with desired toppings and place back into the oven until cheese is melted and lightly brown on the edges. (We love thin and crispy crust)

Tomato Sauce

2 (28oz) cans peeled plum tomatoes with juice

4 cloves garlic peeled and coarsely chopped

1 Tablespoon coarse salt (I just use sea salt)

1 Tablespoon sugar

1/3 c olive oil

1 c fresh basil leaves (I have used 3 T dried basil when i have not had fresh on hand)

1/4 teaspoon pepper

2 teaspoons oregano

1/4 c red wine (our favorite is a Cabernet)

Place all ingredients in a saucepan. bring to a boil for 5 minutes , stir and crush tomatoes with the back of the spoon. Reduce heat and simmer for 20 minutes, stirring occasionally. Use immediately or freeze for up to 3 months.
