Menu Monday

Good morning!

What a busy week we had the last week. Hope you had a relaxing weekend. I did, we needed to recoup from all the activity.

Monday: chicken pasta

Tuesday: mushroom topped steak burgers, steak fries and veggies

Wednesday: spaghetti and parmesan pepper bread, with chocolate cake for dessert. (it was a birthday for my 2nd baby)

Thursday: herbed chicken, rice and veggies

Friday: chicken caesar salad

Saturday: leftovers

One of my favorite marinades is for chicken. It is so simple and you probably always have the ingredients on hand. It will add loads of flavor and is quick if you need something tasty in a pinch.

Herb Chicken Marinade

1/2 c olive oil

Juice from 3 lemons

3 cloves garlic, minced

Herbs (I use Herbs de Provence or mix up your favorite herbs to toss in..parsley, basil, oregano, thyme, rosemary….)

Mix well. Place marinade and chicken in a bag. Let sit for at least 20 minutes then grill.

I also made several breads and more dried apples, and coffee creamer.  This week I plan to make roasted garbonzo beans, graham crackers for snacks to have on hand.

    Not to mention the multiple cakes and cupcakes thrown in the mix! Keep showing us how it’s done, Superwoman!!
