Taco Night

Good evening!

Since the taco shell recipe was requested and I have all the kids in bed I have time to share while I am thinking of it!

Tortillas

You can use whole wheat flour too. I prefer whole whet tortillas with fish tacos.

This makes 8 small tortillas, or you can divide dough to make 4 larger ones.

1 c flour

2 T  oil

¼ t sea salt

1/3 c warm water

Mix in a bowl with a dough hook. Add more water if needed. Dough should form a ball and be smooth. Divide into 4 large or 8 small balls. Cover and let rest for 20 minutes. Roll each ball out or use a tortilla press. Each ball can be rolled out to make an 8” circle. Cook in a dry, clean pan over medium heat flipping once.

To make taco shells I recommend you make smaller tortillas and roll thin to prevent the shells from being too thick and chewy.

  • Heat oven to 375 degrees
  • Let tortillas cool. place 6 tortillas between wet paper towels and place in the microwave for 45 seconds to steam.
  • Sprinkle with salt on both sides.
  • Place over  and between rungs on oven rack (2 rungs will give you a flat bottom, wide taco. 1 rung will be a slimmer traditional taco; but you might have to pry the food in the shell it will be so slim)
  • Bake for 7-10 minutes. Do not let them brown too much or they will crack on you when you try to assemble.

 

I really enjoyed these. I like the crunch they have. Previously I would cook my tortillas longer to make chips for a taco salad but they did not turn out. The chips got soggy and mushy and not real appetizing.

Also, I spent $26 to get a cast iron tortilla press from Amazon. This cut down on rolling time. I still roll them out  if I am looking for a thinner tortilla.

      1 C flour is 1 cup flour.
