Menu Monday: Warm Soup

Happy Monday!

The weather yesterday was so cold. We have sleet and some snow, briefly. After a nice afternoon by the fire hubbie helped me make a great batch of french onion soup. We used the baguette bread I made on Saturday. So tasty!!!


Monday: Chicken divan

Tuesday: Spaghetti Carbonara

Wednesday: Eggs, bacon and fruit

Thursday: BBQ chicken, cheddar potatoes, veggies

Friday: Taco Night

Saturday: Chicken Cesar Salad

Sunday: French Onion Soup

French Onion Soup

4 T butter

3 white onions, thinly sliced

½ c plus 2 T Dry Red Wine (I prefer Cabernet Sauvignon)

4 c chicken stock

4 c beef stock

2 T balsamic vinegar

6 thick slices French bread

2 c Gruyère cheese, shredded

Melt the butter in a skillet; add onions and sauté until tender. Add wine 2 T at a time pausing between each addition until it is evaporated.

Continue cooking until onions are a deep brown. Add chicken and beef stocks, bring to a boil.

Reduce heat, cover and simmer for 1 hour. Season with salt, pepper and balsamic vinegar and 2T Madeira.

Preheat broiler.

Place a slice of bread in a bowl, pour soup over bread and cover with cheese. Broil 1-2 minutes or until cheese is golden and bubbly.
