Menu Monday on Tuesday

After a lazy and carefree spring break Monday got away from me. It did not help that I spent the weekend having fun and in the kitchen. Then, I was not home Monday until after 3:30. Due to spring break and hubbie traveling I did not cook much until my sister and kids showed up.

Monday: Fried Chicken bites, salad and fruit

Tuesday: Taco cups

Wednesday: Sesame Chicken, Fried Rice and veggies

Thursday: Breakfast: Pumpkin Pancakes! Buffett night

Friday: Chicken Cesar Salad

Saturday: Breakfast: egg muffins, Festive irish meal, bangers and mash with irish Soda bread, sautéed squash. (Sister was the chef all day, nice to have a break)

Sunday: Spicy linguine

Since I have not shared breakfast recipes much today you can whip up some egg muffins. This is a recipe from my sister and her families favorite. Hubbie loved these as well. The best part is you can make this ahead of time, store in the freezer and just warm them up for a quick breakfast.

Egg Muffins

Scramble 18 eggs using a whisk (do not cook)

Add ¼ – ½ c milk

Pour into greased muffin tins and bake at 350 for 20 minutes

Variations:  add any of the following to egg and milk mixture

2 c cheddar

1 pound cooked ground sausage or bacon crumbled

Diced tomatoes and shredded parmesan cheese

Chopped mushrooms and green onions


Egg muffins can be stored and chilled after cooked. Place in microwave for 30 seconds to warm.
