Menu Monday: Pita Pizza

It is almost May! Can you believe it?

May is such a busy month around here. Having 4 kids and all the Mother’s Day events, end of year activities and school projects keeps us super busy. I cannot wait until June 1 when we call all relax and not worry about a daily schedule. The warmer weather also brings me to cook less…I prefer more salads and lighter meals. So I tend to just grill some meat and serve only veggie with it.

My homemade horseradish and mustard were not great. Still work to do on that recipe. I did make a macc & cheese my kids loved, well all but my lil man. He’s a tough one to please with macc & cheese. This week in the kitchen is spaghetti sauce, banana muffins, lemon and blueberry bread. Saturday we are having friends over so tortillas galore will be made. I figured its an easy choice for dinner…Mevican on Cinco de Mayo!

So to last week’s menu

Sunday: Pasta leftovers from the previous week.

Monday: Breakfast: eggs, bacon, fruit

Tuesday: Steak Burgers, veggies, onion rings, fruit

Wednesday: Sesame Chicken, fried rice and steamed veggies

Thursday: Fried chicken, macaroni & cheese, steamed broccoli and fruit

Friday: Buffet night

Saturday: Snack supper: Cheeses, breads, fruit and veggies. (This is the kid’s favorite)

Today’s recipe is something fresh and light but full of flavor. We love it around here for lunch or as an appetizer for a party. The only difficult part is finding a safe pre made or make your own. Occasionally I can find one I do OK with. Add some fruit or a salad and you have a wonderful and quick meal.

Pita Pizza

1 whole pita

Extra virgin Olive Oil

Fresh Spinach leaves, washed

Cherry Tomatoes, halved

Crumbled Feta Cheese

Heat oven to 450 degrees; brush oil on pita and place in oven to toast until lightly brown. Remove from oven and lay spinach leaves on pita until well covered, top with desired amount of feta and halved tomatoes. Place in oven and cook until spinach welts and feta has melted.
