Summer and Cookouts!

This weekend is the unofficial start to summer. Most BBQ, picnic and make all sorts of summer goodies to celebrate a long weekend and most importantly Memorial Day. I have special dishes…years ago I hand painted dishes for each holiday, I break out the flag decor and all things red, white and blue.

I am going back to basics for our weekend grilling. Burgers, hot dogs, fries, green bean salad, watermelon and cold deserts. I season my burgers with a homemade Worcestershire sauce, top it with mushrooms and some blue cheese. I may by some safe buns (they are really pricey!), I just love a great burger topped with veggies on a bun. I plan to make some Slush as a snack for the kids during the hot days, we’ve been in the 90’s for a bit now, and I also plan to make some strawberry sorbet and ice cream.

Worcestershire Sauce

I use this on burgers, steaks, cook mushrooms in it…so good! Beats the bottle by far!!!

1  c apple cider vinegar

4 T water

4 T soy sauce

2 T brown sugar

1/2 t garlic powder

1/2 t dry mustard

1/2 t onion powder

1/2 t ginger

Dash of pepper and cinnamon.

On medium heat boil all ingredients together, simmer for 1 minute and let cool. Store in a cool dry place.


I got this recipe from a dear friend of mine years ago. The kids love it and it definitely cools you down on a hot day.

2 c hot water, almost to a boil

2 c sugar

2 c orange juice (use what is safe or fresh squeezed)

2 pints, strawberries, sliced

2 cups pineapple, processed in a food processor or blender until it is a liquid-ish consistency

4 bananas, mashed

Dissolve sugar into hot water, pour into a large bowl and add remaining ingredients. Stir well and then pour into freezeable containers. Freeze overnight. Remove from freezer about 2-4 hours before you plan to serve. Portion into a cup and serve with a spoon. Mixture should be slushy, have some frozen bits throughout.

Green Bean Greek Salad

I love making this it is filling so you can make a meal out of just this dish. We make it quite often around here.

6 c fresh or frozen green beans, cooked

2 tomatoes, chopped

3 hard-boiled eggs, chopped

¾ c feta cheese, crumbled

¼ c organic kalamata olives, halved ( I have found one brand that is safe…it uses red wine vinegar…I am  but when i get more I will post the brand)

½ t sea salt

Stir and add ¾ c Italian dressing

Chill prior to serving for a couple of hours.

Italian Dressing

1 c red wine vinegar

1 1/3 c extra virgin olive oil

2 T water

1½  t of each: garlic salt, onion powder, sugar

1 T oregano

½  t of each: black pepper, dried basil, dried parsley

¼  t of each; thyme, celery salt

1 T sea salt

Combine and whisk well.
