Sweet & Sour Chicken

Last week I  made some sweet and sour chicken that was a HUGE hit with the family. We ate all of it before I could snap a picture. Well we had it again tonight and I got a picture before everyone devoured it.

SS chicken and rice

Sweet & Sour Chicken

4 boneless chicken beasts

½ cup potato starch

2 eggs

Oil for frying

 

 

Sauce:

¾ cup sugar

¼ cup ketchup

½ cup vinegar (rice or white wine)

1 Tablespoon soy sauce

sweet sour chicken1 teaspoon garlic salt

Whisk all ingredients together.

Cut chicken into bite sized pieces. Whisk eggs add potato starch and mix well, add chicken and mix to coat all pieces well.

Heat oil in pan over med-high heat once hot enough add chicken pieces and fry until golden; in another pan add sauce and heat, then add cooked chicken and gently toss to coat with sauce. Let simmer for a few minutes to allow it to be heated thoroughly.
