Thai Chili Chinese Chicken

The sweet and sour chicken was a hit when I posted it and on the CFK Facebook page a follower wanted something a bit spicy so this week I am sharing my favorite chinese dish.

For all of you that love spicy food this is a great chicken dish that I love to eat with a lot of Thai Chili’s.

Using dried red peppers will keep the heat down a bit, but I do recommend using Thai chili’s if you love a hot and spicy dish.

 

 

Spicy Thai Chili

Dried Thai Chili’s or red chili peppers (whatever amount you desire)

4 boneless chicken beasts

½ cup potato starch

2 eggs

Oil for frying

Sauce:

1 1/2 Tablespoons Rice Vinegar

2 Tablespoons Rice Wine (I have used White Wine as well)

3 Tablespoons sugar

3 Tablespoons Soy Sauce

2 teaspoons potato starch

THai Chili chickenMix all of the sauce ingredients together and set aside.

Cut chicken into bite sized pieces. Whisk eggs add potato starch and mix well, add chicken and mix to coat all pieces well.

Heat oil in pan over med-high heat once hot enough add chicken pieces and fry until golden.

In a wok, or separate pan, add a small amount of oil and once heated add in Thai Chilis and stir fry for 30-60 seconds. This releases some of the pepper oils to add the heat. Add chicken pieces and stir fry for a few minutes then pour sauce over chicken and peppers. Stir and cook until sauce becomes bubbly and thick. Serve with fried rice and enjoy!
