Snacks: Fruit Drop Cookies

fruit drop cookieI think these are tasty. My kids will not eat them. I also think these will make great go to snacks during a long run or bike ride. They are soft so they could easily become messy if crammed into a running pouch.

Fruit Drop Cookies

1 ½ c rolled oats

1 c coconut flakes

½ t sea salt

1 t cinnamon

½ t all spice

½  c finely chopped nuts (optional)

Mix well then add:

1 c dried cranberries (or other favorite fruit)

Combine the following in a separate bowl and then add to the dry ingredients and mix well.

3 ripe bananas mashed

¼  c oil

1 t vanilla

Place by spoonfuls, use a cookie cutter or spread in a pan lined with parchment paper; bake at 350 degrees for 20 minutes or until edges are browned.

    I think I’d have to take the coconut flakes out. Have you tried them that way?

      yes, this btch i did without coconut (allergy to it now, just discovered) I think they were just fine. No one else eats them in the house… 🙂
