Grilled Chicken Fettuccine Alfredo

fettucineI love pasta!

I could eat it everyday if calories and waistlines were not such a big deal for health and happiness. Of course when you add cream and cheese it just makes it all better.

I whipped up this tasty dish at the family’s request and did not get to partake in next day leftovers for lunch since it was all gobbled up at dinner.

  • To start out you need to marinate your chicken. I love to mix some EVOO, fresh lemon juice, minced garlic and basil together then pour over chicken and let sit at least an hour before grilling it.
  • Since this is a quick recipe the only other prep is to shred some parmesan cheese. You will need at least a half cup and then some for topping.
  • While the chicken is grilling boil the water for pasta water and cook according to package.
  • You will also want to add 2 cups of heavy cream to a saucepan and place over medium heat. Slowly stir in the half cup of cheese letting it melt and heath through.
  • Once pasta is al dente and drained add it to the cream mixture tossing noodles to make sure they are coated evenly.
  • Pour a nice glass of Chianti.
  • Slice your grilled chicken and lay over noodles and serve.
  • Enjoy!
