My worldly sandwich

Hey there, it has been awhile!

We had a very busy May-August. Lots of company, traveling, camping, kids activities and so on…just no time to get in the kitchen and do something new. I took advantage of the hot weather and ate lots of produce and grilled chicken. Now that kids are back in school things have settled a little bit… their school schedules get busier every year. Sort of wish one of them was driving already.

Anyway, eating grilled chicken got boring real quick and my littlest one wondered if she would turn into a chicken. In my attempt to make chicken exciting we stumbled upon our all time favorite sandwich. We call it the worldly sandwich since there is a bit of Greek and Italian flare to it.

sandwichStart off with the Crock Pot Rosemary Bread.

Rosemary Bread

3 ½ c flour

1 packet yeast

1 ¼ c warm water

¼ c cup rosemary, divided.

3 Tablespoons olive oil

1 teaspoon sugar

1 teaspoon salt

Mix water, sugar, add yeast and let sit till yeast activates.

Stir in half of rosemary, ½ teaspoon of the salt, olive oil and flour. Knead with mixer or hands till combined and soft.

Grease a bowl, add in dough and let rise 1 hour.

Line crock pot with parchment paper, place in dough, sprinkle with remaining rosemary and salt, cover with paper towel and top with the Crock Pot lid. (parchment paper keeps dough from sticking to Crock Pot so make sure the entire inside is lined and the paper towel collects any moisture and keeps it away from bread). Cook on high for 2 hours.

The top of the bread will not be golden or browned, but you can place under the broiler for 5-7 minutes to brown the top and give it a little extra crunch.

We LOVE this bread. It is great with a pasta and salad, it makes great croutons.


Marinate your chicken in Greek Dressing and grill.

Greek Dressing

1/4 cup plus 2 teaspoon olive oil

3/4 teaspoon garlic powder

1 teaspoon oregano

3/4 teaspoon basil

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon onion powder

1/3 cup plus 1 tablespoon red wine vinegar

1/3 cup feta cheese


Slice your bread and spread on some Caesar salad dressing, liberally, add sliced chicken and parmesan cheese.
