Tuscan Tortellini Soup

I so wish I got a picture of my soup bowl the other night. This dish was delish. HUGE hit with the family. I came across a few similar recipes on pinterest that I tweaked to my liking. I added more pasta and cheese then the others did so this was a thick hearty soup. Decrease the pasta and chees if you prefer a thinner consistency.

You will need to make sure you use a safe sausage or a ground meat you can do will work fine. Just season the meat with your choice of herbs to add flavor. Garlic, basil, oregano, rosemary are a few herbs I think would be best.

Also, it calls for tortellini. It is hard to find a corn free one, however you could make your own. It is a fun project to do with the kids on the weekend, but you could also just sub a small pasta in place of tortellini. I am an Alton Brown fan and he has  a simple pasta recipe. You can fill your tortellini with your choice of safe cheese or veggies. I prefer fresh parmesan cheese and spinach.

Tuscan Tortellini Soup

2 T Extra Virgin Olive Oil

1 pound ground sausage or meat of your choice.

3 cloves garlic, minced

1 onion, diced

2 c chicken stock

1- 28 ounce can crushed tomatoes

1/2 t of the following: basil, oregano, red pepper flakes

1/4 t salt and pepper

18 ounces or tortellini or pasta of your choice

1/3 c heavy cream

1/2 c parmesan

croutons, for topping

Heat oil in a Dutch oven add and cook sausage. Drain the fat. Stir in the garlic, onion then whisk in the chicken stock and seasonings. Add the tomato’s and simmer for about 6 minutes before adding in the pasta, cream a cheese. Stir together and heat thoroughly. Top with croutons and extra cheese.
