Creamy Tuscan Chicken


Finally sitting down to type up one of our favorite recipes.

It is an easy meal add to pasta or just skip the carbs and have a side salad.

Tuscan Chicken

6 Chicken breasts

3 T Extra Virgin Olive Oil

1 c heavy whipping cream

1/2 c chicken broth

2 T minced garlic

2 T Italian seasoning (Mixture of basil, oregano, thyme, parsley)

1 c Parmesan cheese, shredded

1-2 c fresh spinach

1/2-1 c sliced sun-dried tomatoes

  1. Cook chicken in a skillet with the olive oil until done, remove and set aside to keep warm.
  2. Add cream, chicken broth, garlic, Italian seasoning, and 1/2 cup (or more) Parmesan cheese. Cook on high heat until it thickens.
  3. Turn down heat to med-low and add tomatoes and spinach leaves. Stir and cook until leaves wilt.
  4. Add chicken back in and turn to cook chicken well in the sauce.
